- 2 leeks
- 1 teaspoon of hot paprika
- 1 onion
- 4 ripe tomatoes
- 2 garlic cloves
- 1 kg of tripe
- 4 sausages
- 1 bay leaf
- 1 cup of vinegar
- 1 tablespoon of Extra Virgin Olive Oil
- Salt
How to make delicious Callos a la Navarra:
- The tripe is cleaned and boiled in a pot with water and vinegar, to clean it thoroughly
- Meanwhile, the vegetables are cleaned and a broth is prepared with the ingredients indicated above, bay leaf, vinegar and salt.
- Once it has boiled for 1/2 over maximum heat, add the tripe, which boils for a long time. (1 hour)
- Sauté the diced ham, the chorizo in wheels and once fried, add the grated tomato and tripe.
- After a while, add the hot paprika, stir well, add 2 ladles of the tripe broth and let it all cook together, over low heat, for 30 minutes.
