Recipe of Carrots in salad (Moroccan recipe)

Ingredients to make Carrots in salad (Moroccan recipe):

For 4 people:

  • 1kg of carrots
  • 200 grams currant
  • 1dl of oil
  • 2 tablespoons of vinegar
  • 1 garlic clove
  • 2 pinches of saffron
  • Ginger powder
  • Cinnamon powder
  • Cumin
  • Salt
  • 2 tablespoons of acacia honey

How to make Carrots in salad (Moroccan recipe):

Peel the carrots, wash them very well, let them drain and dry them with absorbent kitchen paper. Cut them into 2 cm slices. Thick and reserve. Heat the olive oil in a heavy-bottomed pan.

Add the carrots, give them a few turns and add the peeled and mashed garlic, the vinegar, the saffron, a teaspoon of ginger and a pinch of salt. Water with 1/2 l. of water and mix. Cover the pot and cook for 10 minutes. Add the raisins, stir and continue cooking for another 10 minutes. Add the honey and a teaspoon of cinnamon powder. Mix and cook over low heat for 10 minutes. Sprinkle with cumin and serve warm or cold.
