Ingredients to make Black Beans with Cabbage and Potatoes:
- For 4 people:
- 250g black beans
- 1 dl of oil
- Salt
- 1 onion
- 1 leek
- 1 carrot
- 1 green bell pepper
- 1 ripe tomato
- 2 cloves of garlic
- 2 potatoes
- 1 collard
- Some chilies to accompany
How to make Black Beans with Cabbage and Potatoes:
1.The day before we put the washed beans in cold water to soak.
2.The next day with the soaking water, we put the beans in a saucepan.
3.Cover and let them boil and swell.
4.When they have consumed the water to the point that they are exposed, wet them again with cold water (to scare them) and add the oil, the onion, the leek, the carrot, the green pepper, the ripe tomato and the 2 cloves of garlic.
5.Let cook gently, stirring carefully with a wooden spatula, without breaking the beans.
6.After two hours over very low heat, we will see that they are perfectly cooked and whole.
7.Carefully remove the onion, leek, carrot, garlic, pepper, tomato and a scoop of the beans and blend them with a blender.
8.Fry a little garlic in a little oil and also add it to the mixing bowl.
9.Blend everything well and strain over the bean casserole.
10.The last boil is given and the salt is definitively tested.
11.Besides, we will have cooked the cabbage in two waters.
12.The first in boiling water, only until it comes to a boil again (blanch the cabbage, so that it loses its strong smell) and the second cooking with cold water, seasoned with a pinch of salt and a dash of oil.
13.When the cabbage boils, add the chopped potatoes and let them cook until the potato is cooked.
14.We make a rehash with 1 clove of garlic and pour it over the cabbage.
15.We serve the beans accompanied by the cabbage and the potatoes in a separate bowl.
16.To finish, put some chilies in vinegar, a good olive oil and a little salt so that diners can season the beans to their liking.
