Ingredients to make AJI DE CARNE SOUP:
- 2 lb of papa chola
- 1 lt. milk
- 3 oz of white rice
- 3 oz ground peanuts
- 1 1/2 of meat or beef tenderloin
- 2 maqueño bananas (sweet banana)
- 2 medium kidney tomatoes
- 3 thick branches of long white onion
- 1 teaspoon dried oregano leaves
- 4 cloves of garlic
- 2 stalks of celery
- 2 carrots
- 1/4 ground cumin
- salt and pepper to taste
How to make AJI BEEF SOUP:
- PREPARATION
- Place the beef tenderloin with the finely chopped celery, grated carrot, and 2 crushed garlic cloves in a pressure cooker for 20 minutes. In 2 lit of water, remove the meat separately and place the rice and peeled potatoes without stirring, cook them in the base broth until the potatoes open a little without falling apart
- Separate the cooked meat, cut it into small pieces and put it in a pan to fry until golden brown, cut the long white onion into chopped pieces about 6 cm long, stir until it turns crystalline, add the chopped maqueño banana, continue frying (without much oil) and finally add the diced tomato, place this refer to in the base broth along with the cooked potatoes as well as the rice, season with 1 cup of milk blended with the peanuts, add the ground cumin together with 2 garlic cloves a pinch of black pepper and the oregano leave to boil for 15 min.
- This dish is served by placing a whole cooked potato, with a branch of parsley as a decoration on the plate and slices of avocado.
