You won’t believe how good the stuffed aborigines are in the microwave compared to traditional cooking when you try them because they are extremely tasty and on top of that, you save a lot of preparation time, so don’t wait any longer and get to work!
Ingredients to make vegetarian stuffed eggplants in the microwave:
- 2 eggplants
- 1 onion
- 2 garlic cloves
- 1 red bell pepper
- 1 green pepper
- 1 carrot
- 200 grams of crushed natural tomato or fried tomato
- 1 splash of extra virgin olive oil
- 1 pinch of ground black pepper
- 1 pinch of salt
- 1 pinch of turmeric
- 1 handful of grated Parmesan cheese
How to make Vegetarian Stuffed Eggplants in the Microwave:
- Wash the aborigines well and cut them in half lengthwise. Make transversal cuts approximately 1 cm deep with the tip of a knife without actually cutting the skin of the vegetable.
- Sprinkle a little salt and a drizzle of oil on top and microwave the aborigines on a suitable plate or tray at full power for 10-15 minutes (cooking time will vary depending on the power of your appliance and the size of the vegetables).
- Meanwhile, prepare the vegetarian stuffed eggplant stir-fry by peeling and cutting all the vegetables finely or coarsely (according to your taste).
- Reserve the tomato.
- Heat a pan with a little oil and start to poach the vegetables.
- Add a pinch of salt, turmeric and ground black pepper and stir well.
