Samosas are a kind of triangular dumplings typical of the cuisine of India and other South Asian countries; they are one of the best-known vegetarian recipes in Indian cuisine worldwide. • 3 potatoes
• 1 onion
• 1 cup frozen peas
• 1 teaspoon garam masala
• 1 teaspoon grated fresh ginger
• 1 teaspoon curry powder
• 1 teaspoon of turmeric
• 1 squeeze of lemon juice
• 1 pinch of salt
• 1 pinch of pepper
• 1 tablespoon of oil
• 1 tablespoon chopped fresh coriander
How to make vegetable samosas with filo pastry:
Cook the potatoes in boiling water until soft, peel and cut into small pieces. Also cook the peas until they are soft, reserve them.
Chop the onion and fry it in a pan with hot oil until it begins to brown slightly. Next, add all the spices to the pan, stir and toast them until they begin to release their aroma so you can continue with the filling for the vegetable samosas.
Add the peas and potatoes to the pan, add a little salt and a splash of lemon juice. Cook the filling for several minutes, stirring so that it does not stick. Let the filling of the vegetable samosas rest and cool down. When it is cold, add the chopped fresh cilantro and stir.
Take each sheet of filo dough and cut it into 3 strips. Place a tablespoon of filling on the bottom end of each dough strip and begin wrapping, bringing the right corner to the left side edge.
