Recipe for vegan polenta croquettes

Polenta is a food originally from northern Italy that is prepared in many countries around the world. Polenta, made from yellow corn, is used to eat on its own or combine in the preparation of other dishes. With this easy recipe you will learn to prepare vegan croquettes, delicious and perfect to serve as snacks.

Ingredients to make vegan polenta croquettes:

  • 200 grams of yellow corn flour
  • 80 grams of red pepper
  • 80 grams of white onion
  • 80 grams of Spinach
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 liter of sunflower oil

How to make vegan polenta croquettes:

1.Before making this recipe, the first step is to get all the ingredients ready.

2.In a pot with 250 ml of boiling water and salt, add the cornmeal and mix very well, cook over low heat.

3.When the dough detaches from the pot, stop cooking and reserve.

4.Separately, in a frying pan with oil, fry the pepper and finely chopped onion. When it is soft, add the spinach leaves and cook until they reduce their size, season with salt and pepper.

5.Add the fried vegetables to the polenta. Mix very well until you get a homogeneous mass.

6.Make small croquettes with the polenta and vegetable dough and fry in oil at medium heat until golden brown. This should not take more than 10 minutes.
