Recipe for Tumbet with loin (or Iberian secret)

Well here I bring you a typical Mallorca dish with a touch of Andalusia. This is the message that we has shared. This tumbled with loin is specially made with Iberian secret but you can add the meat or part of the pork that you like the most.

Ingredients to make Tumbet with loin (or Iberian secret):

  • 2 potatoes
  • 2 egg plants
  • 2 zucchini
  • 4 Italian green peppers
  • 1 piece of loin or Iberian secret in fillets
  • 4 tomatoes
  • 2 spring onions
  • Ground black pepper to taste
  • coarse salt to taste

How to make Tumbet with loin (or Iberian secret):

  1. The first thing we peel and finely cut one or two spring onions and three or four tomatoes depending on the amount you make, and make a sauce.
  2. Season at the end and reserve.
  3. This is the spring onion before it is chopped.
  4. On the other hand, peel and cut one or two potatoes more or less about 2 millimeters and fry them and put them on a plate with paper to remove the oil.
  5. We do the same with the aborigine, the zucchini and the peppers, frying them in this order, because the peppers give the oil its flavor.
  6. On a tray we are putting a layer of the tomato and spring onion sauce, a layer on top of the potato, then the sauce again, a layer of aborigine, another of the sauce, a layer of zucchini, another of the sauce and finally, a layer of peppers and we cover all the Mallorca tumbled with the tomato sauce.
  7. This is the aspect of the tumbled de Mallorca before turning on the oven beforehand at 180 ºC.
  8. Put the Mallorca tumbet in the oven and leave it for 30 minutes.
  9. On the other hand, meanwhile I have put the Iberian secret on the griddle seasoned with coarse salt to fry it.
  10. Assemble the tumbet dish with loin or secret Iberian, and eat!
