Ingredients to make stuffed yucca croquettes:
- 2 kilograms of Yucca
- ½ kilogram of cooked ham
- ¼ cup of milk (60 milliliters)
- 1 egg white
- 1 cup of wheat flour (140 grams)
- 2 cloves of garlic
- 1 bunch of parsley
- 1 pinch of salt
- Oil for frying
How to make stuffed yucca croquettes:
Gather all the ingredients on your kitchen table before you start cooking, if we have everything measured and weighed, the preparation of the recipe will be much faster.
Keep in mind that the filling of these yucca croquettes is to taste, you can make them with cheese, chicken or ground meat.
To cook the yucca, remove the skin, chop and boil in plenty of salted water for about 20 minutes or until you can check that it is tender. Then, wring out and remove the central strand, you will find it easily because it is a fairly thick thread.
Next, make a puree by mashing the cooked cassava together with the milk, the egg white and the finely chopped parsley. This will be the dough for our yucca croquettes, so add an extra point of salt if you consider it necessary.
To form the croquettes we will follow the same process as in the elaboration of the banana and cheese croquettes. We take small portions of dough, make a hole and place the ham filling in the center, to then flatten, close and give it the typical croquette shape, round or elongated.
The ham must be finely sliced and remember that you can change the filling to your liking.
Tip: So that all the croquettes are the same size you can use an ice cream scoop to calculate the portions.
Place the wheat flour on a plate and cover the croquettes, one by one, to remove moisture and make a kind of batter. Then you can fry them in abundant oil until they are well browned on all sides.
