Recipe for squid croquettes in their ink

Do not be scared by the number of steps, making homemade croquettes is not difficult but you have to be patient, because if you carry out the entire procedure correctly the result will be a delicacy of gods, so do not miss this opportunity and go ahead and enjoy the flavor of the squid in a different way.

Ingredients to make squid croquettes in their ink:

  • 200 grams of clean squid body
  • Squid ink
  • 160 grams of flour
  • ½ onion
  • 200 milliliters of milk
  • 1 clove garlic
  • ½ glass of white wine
  • 1 bay leaf
  • 1 pinch of salt
  • 1 liter of water
  • Olive oil
  • Bread crumbs
  • 2 tablespoons of Butter
  • I beaten egg

How to make squid croquettes in their ink:

The first step to make these homemade croquettes is to finely chop the squid with the onion and garlic. You can do it in a grinder so that everything is an even size and very fine. Meanwhile, heat a pan with oil. When the oil is hot, add these ingredients and fry for a few minutes until everything is lightly browned and loose. Next, add the water and season the preparation by adding salt and the bay leaf. Also add the white wine, stir a little and keep cooking with the pan covered until it comes to a boil. Then remove the lid and wait another 10 minutes before turning off the heat. To continue assembling the dough for the squid croquettes, we drain this stew that we have prepared, separating and leaving the broth on one side and the driest part on the other.

We must have about 800 milliliters of broth, if not, you can reduce it or add more water until you reach this amount. When you have it, mix it with the milk and keep everything warm.

On the other hand, melt the butter in another pan and sprinkle little by little, without stopping mixing, the flour. In this way we will prevent lumps from forming in the dough of our homemade croquettes.

When we see that the flour is toasted and homogeneous, we add the broth that we separated in the previous step and work the dough. It is important that the flour absorbs all the liquid.

When the dough has a uniform and slightly thick texture, as seen in the photos, we add the squid ink. We continue to mix until we get a black mass. Reserve a little squid ink for batter time.

You can buy the squid ink separately, if you take it yourself from the squid, you should have ink from approximately one kilo of squid for this recipe. Now we have to incorporate the dry part of the sofrito into the dough. Without stopping to work the dough, add this and once you check that everything is well mixed, place this dough of squid croquettes in a large enough source.

Spread all the dough and cover the mold with transparent plastic wrap. Reserve in the fridge until the next day.

With this dough you can form the croquettes and coat them by passing them through beaten egg and breadcrumbs. In this way they will be delicious squid croquettes, but on the outside they will be the same as any croquette.

So, if you want the croquettes to have the color of squid ink, you should mix breadcrumbs with a little warm water and squid ink. Place this dough between two sheets of kitchen paper and toast in the oven until dry.

Crush this thin slice of black bread and you will get a new breadcrumbs but black in color, ideal for coating the squid croquettes in their ink.

Fry the squid croquettes in hot oil until crispy on the outside. Remove on absorbent paper to remove excess oil and you can enjoy this squid-flavored delicacy.
