Recipe for Spinach rolls with cauliflower

Ingredients to make spinach rolls with cauliflower:

  • 1 package of Fresh Pasta
  • 1 splash of olive oil
  • 1 unit of green pepper
  • 1 unit of yellow pepper
  • 1 celery stalk
  • ½ leek unit
  • 1 handful of fresh spinach
  • 1 unit of Cauliflower
  • 1 teaspoon of Turmeric
  • 1 teaspoon of ginger
  • 1 teaspoon of cumin
  • For the willow:
  • 3 tablespoons of Greek yogurt
  • 2 teaspoons of tandoori sauce
  • 1 handful of sesame seeds
  • 1 unit of Lemon (the juice)

How to make Cauliflower Spinach Roll Ups:

  1. We take a casserole and cover the base with the extra virgin olive oil.
  2. Then, we cut the leek into slices and put them in the casserole.
  3. Chop the peppers into small pieces and the celery with its leaves and also add these ingredients to the casserole
  4. Remove and let cook for a few minutes.
  5.  Then we add the fresh spinach and continue to sauté. While the spinach is reducing, we take the cauliflower and cut it into florets, cutting the stem as much as possible.
  6. Add the separated florets to the casserole along with the spices and let everything cook together for 12-15 minutes, covered and over medium heat. Go check the cauliflower.
  7. Once we observe that the cauliflower is tender, we crush it with the rest of the ingredients forming a puree or paste, and reserve.
  8.  We take a sheet of filo pastry, spread a little oil and fold it in half, fold it in half again.
  9.  We put a soup spoon of puree and roll up very carefully.
  10. Close the ends to prevent the filling from coming out and place all the rolls on a baking tray.
  11. Tip: Preheat the oven to 180ºC.
  12. We bake the vegetarian rolls for 17 minutes, or until we see that they are ready. For the sauce, we mix all the ingredients well and that’s it!
