Recipe for savory crepes stuffed with tuna

Filled pancakes or savory crepes are a great option to prepare a rich and simple homemade meal when you don’t have much time to cook or you simply want to try something different in your daily routine. So go ahead and try these savory crepes stuffed with tuna and mayonnaise to suck your fingers, so easy to make.

Ingredients to make savory crepes stuffed with tuna:

  • For the crepe batter:

• 1 egg

• 125 grams of wheat flour or cornstarch

• 150 milliliters of semi-skimmed milk, lactose-free or vegetable

• 1 pinch of salt

• 1 teaspoon of oil

• 1 piece of butter (to grease the pan)

  • For the filling:

• 1 onion

• 1 tomato

• 2 cans of tuna in olive oil

• 4 tablespoons of mayonnaise

• 1 pinch of pepper

• ½ iceberg lettuce

• 1 clove garlic

How to make Savory Crepes Stuffed with Tuna:

Mix all the ingredients of the stuffed savory crepes dough (except the piece of butter that is to grease the pan) in a bowl with the help of a kitchen rod. Then cover it with cling film, put it in the fridge and let the dough rest while we make the filling.

Peel and finely chop the onion and garlic and begin to poach them in a pan with a splash of olive oil from the previously drained cans of tuna. Season with salt and pepper and cook until the onion caramelizes.

Trick: This way the tuna and mayonnaise crepes will have much more fish flavor.

Meanwhile, blanch the tomatoes in a pot of boiling water so you can easily remove the skin. Then cut them into squares and place them in another bowl. Add the drained tuna and the mayonnaise sauce and mix everything.  Wash the iceberg lettuce well, cut it into thin strips or break it with your hands and reserve.

Take the batter for the filled savory crepes out of the refrigerator, grease a non-stick frying pan with the piece of butter and place over medium-low heat. When hot, pour in a ladleful of batter and spread evenly in a thin layer. Let it brown on the bottom, then flip it over with a spatula and brown the other side. Repeat this same step to form all the pancakes or pancakes.

Trick: You will see that they will be golden when they start to bubble all over the surface.

When the onion is caramelized, drain it well and add it to the bowl where the filling is together with the lettuce and mix everything well.

Place the filling in the central part through the savory pancakes and shape them by rolling them. Serve the Savory Tuna Stuffed Pancakes with a few more lettuce leaves for an easy and delicious starter or main course!
