Recipe for sardines wrapped in brick pasta

Ingredients to make SARDINES WRAPPED IN BRICK PASTA:

  • 12 small sardines
  • 1 package of brick paste
  • 1 leek
  • 1 Italian green pepper
  • 12 black olives
  • 1 teaspoon fresh oregano
  • 1 lemon
  • olive oil for frying
  • salted
  • black pepper
  • 4 tomatoes and chopped parsley

How to make SARDINES WRAPPED IN BRICK PASTA:

  1. Buy gutted sardines. Wash and remove their heads.
  2. Open them on one side, leaving them in the shape of a book, removing the spine (if the sardines were very small, it would not be necessary to remove the spine).
  3. Dry well with absorbent paper and add salt and pepper, sprinkling them with a few drops of lemon, reserving them in the fridge.
  4. Wash the white stem of the leek and cut lengthwise; chop into very fine cubes. Put a saucepan and mix with the green pepper also chopped and the chopped olives, add the oregano and salt slightly.
  5. Fill the sardines with a small portion of this mixture and give it its shape again. Roll the sardines in the brick paste in such a way that the sides are sealed, so that they do not open when frying.
  6. Fry in abundant hot oil, letting them drain on absorbent kitchen paper.
  7. They are served on slices of tomato and sprinkled parsley.
