Ingredients to make salmon medallions in zucchini sauce:
- 500 g courgettes, cleaned and sliced
- 800 g salmon slices, boneless and skin removed

- 40ml olive oil
- 1 onion, finely chopped
- 40ml white wine
- 200 ml vegetable broth
- the juice of a lemon
- 1 tablespoon chopped fresh dill
- steamed potatoes
How to make SALMON MEDALLIONS IN ZUCCHINI SAUCE:
- Boil the zucchini slices for three minutes in salted water.
- Drain and wrap each slice of fish with a slice of zucchini (reserve the remaining zucchini), season and fix with a toothpick. Brown the onion and the rest of the zucchini in the oil.
- Water with the wine and add the vegetable broth.
- Let cook over medium low heat for 20 minutes.
- Pass through the blender and season.
- Add the lemon juice. Book. In a frying pan, brown the salmon slices for eight minutes on both sides.
- Serve them with the zucchini sauce and steamed potatoes.
- Sprinkle with chopped dill.
