Recipe for Rico Consome with Parmesan cheese

Ingredients to make Rico Consome with Parmesan cheese:

  • 4 potatoes
  • 2 tablespoons of flour
  • 1 liter of vegetable broth
  • 200 grams of butter
  • 1 packet of grated Parmesan cheese

How to make Rico Consommé with Parmesan cheese:

  1. Peel, wash, and cook the potatoes until soft, remove and purée, adding a little cooking water.
  2. Heat the butter very well, add the flour and leave until it turns golden.
  3. Mix the potatoes, with the browned flour and the vegetable broth, leave it on the heat for 20 minutes, and at the last moment add the Parmesan cheese.
  4. It is served with some very small fried breadcrumbs.
