Ingredients to make Rico Consome with Parmesan cheese:
- 4 potatoes
- 2 tablespoons of flour
- 1 liter of vegetable broth
- 200 grams of butter
- 1 packet of grated Parmesan cheese
How to make Rico Consommé with Parmesan cheese:
- Peel, wash, and cook the potatoes until soft, remove and purée, adding a little cooking water.
- Heat the butter very well, add the flour and leave until it turns golden.
- Mix the potatoes, with the browned flour and the vegetable broth, leave it on the heat for 20 minutes, and at the last moment add the Parmesan cheese.
- It is served with some very small fried breadcrumbs.
