Recipe for rice croquettes with ham and cheese

As is well known, rice is one of the most consumed cereals worldwide, it is the staple food in many cultures in both Asia and America, for which it is well known and used in home cooking.

We have all eaten cooked rice someday but in this easy recipe what we will do is use that rice as an ingredient to create something more original. The rice croquettes with ham and cheese are a recipe to use, perfect to give a second life to the rice that we have left in the fridge or that nobody wants to eat anymore, although they are so good that when you try them, you will want to make white rice from scratch to be able to make these original homemade croquettes.

Ingredients to make rice croquettes with ham and cheese:

  • 250 grams of Rice
  • 1 cup of chopped ham
  • 1 cup grated Oaxaca cheese
  • 20 grams of unsalted butter
  • 2 pieces of Egg
  • 1½ cups of ground bread
  • 1 teaspoon salt
  • 1 teaspoon of pepper
  • 1 cup of oil

We start by gathering all the necessary ingredients to make this delicious recipe for homemade croquettes.

We assure you that you will be surprised by the final result and that when you try the delicious rice croquettes with ham and cheese you will want to do more by creating new recipes to your liking. Wash the rice and put it in a pot with a pinch of salt. Cook over medium heat and let the rice boil for about 20 minutes or until it is perfectly cooked and soft in texture.

Tip: To make the rice croquettes you can also use the rice that you have left over from the day before or from another recipe

To make the croquette dough, place the cooked rice in a bowl and mix it with cheese, butter, ham, a little beaten egg and season with salt and pepper. Mix the ingredients perfectly until you have a uniform mixture. Next, we take a little of the rice mixture and begin to form the croquettes. When we have all the balls made, pass them through the beaten egg and cover with the ground bread.

If you want the croquettes to be crunchier, you can coat them with Doritos or French fries instead of breadcrumbs, as is done in the nuggets with Doritos recipe or in the battered  cheese recipe.

To finish, heat enough oil over medium heat and gradually add the croquettes to fry until they are golden and crispy. Then, we remove them and drain them to remove excess fat.
