Ingredients to make Baked Vegetable Rice Cake:
- 2 cups of rice
- 1 handful of Mashua or small bitter potatoes
- 1 pound of spinach
- 1 small bell pepper
- 1 small white onion
- 1 clove garlic
- 6 white mushrooms or other to taste
- 4 Eggs
- Cream cheese or mozzarella
- 1 Zucchini or small courgette
- 1 pinch of salt
- 1 pinch of Cumin
- 1 pinch of pepper
- 1 pinch of toasted sesame
How to make Baked Vegetable Rice Cake:
- The first step to make this rice cake with baked vegetables is to fry half an onion and minced garlic in a pressure cooker. Then add the rice with 3 cups of water, the salt to taste and the sliced mashua.
- Cook for 15 minutes over low heat from when the pot starts to sound. When ready, add two eggs and mix (in the photo we see the pot before covering it).
- For the filling of the rice cake with vegetables, cook the spinach. Then chop the mushrooms, the other half onion, the pepper and the zucchini, put in a pan with a pinch of salt, toasted sesame, pepper and cumin and let the flavors integrate.
- In a baking dish, assemble the rice cake with vegetables: put oil on the base and add a layer of rice. Put another layer of the spinach filling and two sliced hard-boiled eggs spread out. Make a layer of cream cheese and cover with another layer of rice.
