Ingredients to make Ravioli stuffed with spinach:

  1. 2 bunches of fresh spinach
  2. 250 grams of cottage cheese or cream cheese
  3. 2 units of Eggs
  4. 2 tablespoons of olive oil
  5. 1 pinch of salt
  6. 1 pinch of Pepper
  7. 500 grams of wheat flour
  8. 1 pinch of garlic paste

How to make Ravioli stuffed with spinach:

  • To make our stuffed ravioli recipe, we must first prepare the ingredients.
  • Remove the stems from the spinach and only use the leaves, we must wash them before using them. Bring a deep pot with hot water over medium heat and, once the water is boiling, add our spinach leaves and cook them for a couple of minutes, since spinach leaves are very fragile.
  • Remove the spinach and take them to a bowl with cold water to cut the cooking, reserve them to continue with the preparation of the filling.
  • To make the stuffed pasta dough, we must sift (pass through a sieve) the wheat flour in a bowl, add the eggs in the center and mix these ingredients very well until they are integrated. Add salt and olive oil until you can mix it by hand and knead it.
  • Reserve the dough by covering it with plastic wrap and letting it rest for about 20-30 minutes in a warm place.
  • Put the cooked spinach, the cottage cheese in a bowl (if you can’t find this type of cheese you can work with cream cheese), salt, pepper and a little garlic paste to give a touch of flavor to the ravioli filling.
  • Process very well until the ingredients are integrated, rectify the flavor and, if you wish, add more salt or pepper to taste.
  • Stretch the dough of our stuffed pasta very well and, with the help of a spoon, add a little bit of the filling.
  • Cover the ravioli filling with another layer of dough, paying particular attention not to leave any air in the homemade ravioli, as this would cause them to explode when cooked.
  • Cut the edges with the help of a knife and make sure they are well closed so that the filling does not come out when we are cooking it.
  • Cut each of the ravioli with the shape you want. As we are working with homemade pasta,the size depends on each of the cooks.
  • Take the stuffed pasta to a plate with flour so that they do not stick, cover the spinach ravioli with a clean and damp cloth and let them rest.
  • Bring a deep pot over medium heat with a little water and, once you see that the water is boiling, add a little olive oil and salt to taste. Then, add the ravioli 4 by 4, more or less, and let them cook. The ideal is not to cook them all at the same timeto prevent them from sticking together, when working with fresh pasta it is very easy for this to happen. Cook the ravioli until al dente and remove from the water.
  • Take them to a pan over medium heat with a little hot oil, add salt and pepper to taste.
  • To make the ravioli with sauce, add a little milk or cream and lower the heat so that it does not dry out. I added a little basil to give the stuffed pasta an extra touch.
  • Serve the spinach ravioliadding a little salt and pepper to taste, if you wish you can add fresh basil and Parmesan cheese to decorate.
