Recipe for Quinoa Stewed with Vegetables

Since I discovered quinoa or quinoa I use it very often because I love it, it is easy to prepare in any recipe and it is very healthy. It is a natural source of fiber, protein and phosphorus, which helps maintain bones in natural conditions.

Ingredients to make Quinoa stewed with vegetables:

  1. 100 grams of Quinoa
  2. 1 leek
  3. 1 Carrot
  4. 1 Zucchini
  5. 1 green pepper
  6. 1 ripe tomato
  7. 1 splash of virgin olive oil
  8. 1 pinch of salt
  9. 1 pinch of black pepper

How to make Quinoa stewed with vegetables:

  • The first thing we have to do to prepare this stewed quinoa with vegetables is to measure the quinoa in a glass and then add twice as much water.
  • Peel the carrot and the tomato. Cut the leek, pepper, carrot, zucchini and tomato into small cubes.
  • Heat a saucepan or frying pan with oil, add the leek and pepper and fry for a few minutes. Add the carrot and zucchini and continue frying. Add the tomato and cook everything together for about 8 minutes. Season the vegetables.
  • Put the quinoa in a strainer and rinse it under cold running water. Add it to the vegetables and stir.
  • Pour twice as much water as the capacity of the quinoa over the vegetables, season and cook for about 10 minutes, until the grain opens and the quinoa with vegetables has absorbed all the water. Then let it sit covered for another 5 minutes.
  • Taste the quinoa stewed with vegetables for salt and add a little ground pepper. Plate and serve hot.
