Recipe for potato salad with tuna and vegetables

Having potatoes at home is always a success, since they offer us a thousand and one possibilities when it comes to cooking. My proposal is to prepare a salad that can be eaten warm or cold and that is ideal both for a light dinner and for a meal accompanied by a grilled steak or a good piece of vegetable quiche.

Ingredients to make Potato Salad with Tuna and Vegetables:

  • 1 kilogram of potatoes
  • 250 grams of prickly pear in oil
  • 2 eggs
  • 1 small onion
  • 1 roasted red pepper
  • 100 grams of green olives without stone
  • 1 splash of extra virgin olive oil
  • 1 pinch of salt
  • 1 pinch of ground black pepper

How to make Potato Salad with Tuna and Vegetables:

Peel and cut the potatoes into pieces. We put them in a pot with water on the fire and when they are soft (without being past but they melt) we put them to drain and reserve. Separately, to continue with the preparation of the potato, tuna and vegetable salad put the eggs and water in a saucepan until they are covered. We place them on the fire and when they start to boil we keep them for 5 to 7 minutes. Remove, drain the hot water and cover with cold water. After a few minutes, peel and chop the boiled eggs and set aside.

Peel and chop the onion. Then chop the red pepper and slice the olives. Likewise, we drain the tuna. In a large salad bowl we put the drained tuna and crumble it a little if we consider it necessary. Add the potatoes, eggs, onion, pepper and olives. Then, we season with salt, pepper and a splash of olive oil, move well so that the ingredients and the dressing are mixed, and now we can enjoy!

Tip: My trick to make it very smooth is to add the potatoes while they are still hot. It gives a great texture to the salad.

This potato salad with tuna and vegetables is great both warm and cold, so if there is any leftover, store it in a well-covered container and you can take it another time. It can be served as a starter to precede spinach and cheese lasagna.
