Recipe for Onion Soup without Bread

Onion soup is a classic of French cuisine. It is a dish that is made with very humble ingredients but is frankly delicious. The traditional thing is to cover it with a few slices of bread on which cheese is placed and put in the oven to gratin it. Ingredients to make onion soup without bread:

  1. 4 onions
  2. 60 grams of butter
  3. 100 milliliters of white wine
  4. 1500 milliliters of water (6¼ cups)
  5. 1 teaspoon of meat concentrate (Bovril)
  6. 1 pinch of salt
  7. 1 pinch of black pepper
  8. 1 pinch of nutmeg

How to make onion soup without bread:

  • We start by peeling the onions and julienne those (strips). In a frying pan, put the butter and bring it to the fire. When the butter is melted, add the onion, stir well and cook covered over low heat, stirring occasionally.
  • When the onion begins to soften, add the tablespoon of meat concentrate and the white wine. Stir well and cook over low heat until very tender.
  • Tip: You can remove the meat concentrate and add homemade broth if you prefer.
  • Pour the contents of the pan into a saucepan, add the water and season with salt, black pepper and nutmeg, cover and let the simple onion soup cook for at least an hour over medium-low heat so that the vegetable sweats well.
