Recipe for mackerel salad in oil

Salads with fish are a good alternative to bring healthy, complete and light dinners to our table. We learn how to prepare it with mackerel, mozzarella pearls, olives and raisins. It is a dish full of flavors and contrasts that will help us eat healthily and that can accompany other fish dishes or a sandwich or snack. Ingredients to make mackerel salad in oil:

  • 1 lettuce
  • 125 grams of mozzarella cheese pearls
  • 1 can of mackerel in oil
  • 1 small can of sweet corn
  • 50 grams of grated celery
  • 1 handful of muscatel raisins
  • 1 handful of salad seeds
  • 1 handful of croutons
  • 60 grams of pitted green olives
  • 1 splash of extra virgin olive oil
  • 1 splash of vinegar
  • 1 pinch of salt
  • 1 pinch of minced garlic

How to make mackerel salad in oil:

Cut, wash and drain the lettuce very well. The ideal is to use a spinner for lettuce but if we don’t have it we will leave it in a colander while we prepare the rest of the ingredients.  Drain the corn and put it in a bowl. Add the grated celery and olives. Drain the oil from the can of mackerel, shred the fish a little and add it to the pan. We put a handful of raisins and another of seeds for salad. Lastly, add the well-drained lettuce. Prepare a dressing with olive oil, vinegar, salt and ground garlic and dress the salad. We mix well.

Before serving the mackerel salad in oil, add the croutons and the mozzarella cheese balls, mix carefully so as not to break the cheese and serve immediately so that the bread does not soften. Bon Appetite!
