Recipe for grilled anchovies with special juliana

Ingredients to make GRILLED ANCHOVIES WITH SPECIAL JULIANA:

  • 16 medium open anchovies without thorns
  • 1 spring onion
  • 1 clove garlic
  • 1 orange
  • 1 lemon
  • 1 lime
  • 1 teaspoon grain mustard
  • 1 glass of olive oil
  • coarse salt
  • Pepper

How to make GRILLED ANCHOVIES WITH SPECIAL JULIANA:

  1. Prepare the dressing: wash the citrus fruits well and dry with a cloth; Grate the skin into fine julienne strips (without the white part to avoid bitterness) with a special grater or by cutting the skin with a very sharp knife and then into thin strips.
  2. Place in a glass bowl and add the oil.
  3. Let rest for at least 1 hour at room temperature, stirring the whole from time to time.
  4. Squeeze the citrus and reserve the juice obtained separately.
  5. Chop the spring onion and garlic as finely as possible; put in a frying pan with a little macerated and strained oil, and fry for 10 minutes over low heat; remove from heat and add the julienne and mustard, stirring with a whisk until well blended.
  6. Reserve this sauce to cover the grilled anchovies.
  7. Wash the anchovies and dry with kitchen paper
  8. Sprinkle with pepper and coarse salt, and place on a platter, sprinkling them with part of the macerated oil on both sides (they can be left overnight, prepared like this).
  9. At that moment, they are passed through a very hot iron, brushed with oil, until they are golden.
  10. Place on the presentation dish and cover with the citrus sauce.
