Recipe for Green Swiss Enchiladas with Poblano Chile

Enchiladas are one of the most popular appetizers when it comes to Mexican food. There are a great infinity of varieties: red, green, black, etc; and with a large number of different ingredients since they can be stuffed with chicken, beef, pork, cheese, egg, etc.

This time we bring you some simple and exquisite Mexican enchiladas. It is a rich green enchiladas, prepared with a base of poblano pepper, something that gives them a characteristic flavor and that combines very well.

Ingredients to make Green Swiss Enchiladas with Poblano Chile:

  • 16 pieces of corn tortilla
  • 2 pieces of poblano chili
  • ½ liter of sour cream
  • 1 cup of milk (240 milliliters)
  • 4 pieces of Egg
  • ¼ piece of Onion
  • 1 clove garlic
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 tablespoon of oil
  • 1 tablespoon of powdered chicken consommé
  • 8 slices of Manchego cheese

How to make Green Swiss Enchiladas with Poblano Chile:

In the following image you can see the ingredients that we will need to prepare these delicious green Swiss enchiladas with poblano pepper. We are going to start this preparation by roasting the poblano peppers directly over the fire, and once they are completely roasted, we place them for 5 minutes inside a sealed plastic bag, this in order that the shell comes off more easily. Meanwhile, place the eggs in boiling water and cook over medium heat for 15 minutes. Once cooked, peel it perfectly and chop it finely. We reserve a moment. On the other hand, once the poblano peppers are ready under running water, we completely remove the shell and also remove the seeds and veins.

Once completely clean, add them to the blender along with the onion, garlic, sour cream, milk, powdered chicken consommé, a pinch of salt and proceed to blend until a liquid and homogeneous sauce is obtained for the Mexican enchiladas. In a previously heated frying pan, boil our sauce for the green enchiladas for at least 5 minutes. Meanwhile we take the corn tortillas and inside them we add a little chopped egg, as shown in the following image. We do this with all the tortillas.

Once all the tortillas are filled, we are going to fry them a little in a pan with previously heated oil, just a little, do not let them brown. Once the corn tortillas are ready, we place them on the plate where we will serve our Swiss enchiladas and bathe them with the poblano pepper sauce. Finally, on top of the sauce, add two slices of Manchego cheese and let them gratin. We serve our green Swiss enchiladas with poblano pepper hot and we can accompany them with a delicious guava juice with orange.
