Ingredients to make Dorada in salt with escalibada.

  • 2 Gold.
  • 1 kilo of coarse salt.
  • 1 lemon.
  • 4 bay leaves.
  • 1 Glass of olive oil.

How to make Dorada in salt with escalibada.

  1. We prepare all the ingredients and pre-heat the oven to two hundred degrees.
  2. On a baking tray, we place a thick layer of salt (approximately one finger).
  3. We place under each sea bream a bay leaf and a lemon slice, (Reserve the rest of the lemon).
  4. Cover the sea breams with a thick layer of salt, which should be very tight, sprinkle the salt with a little water, squeeze the rest of the lemon on top and put it in the oven.
  5. The time depends on the oven and the size of the sea breams. Normally we can remove them when the salt begins to acquire a brown color. They are usually about 25 or 30 minutes.
  6. Now comes the most cumbersome part. When it’s done, cover the tray with a clean kitchen towel and hit it with the pestle or a tablespoon until the crust breaks.
  7. Carefully remove the sea breams, remove their heads and bones and serve.
