  • 1 unit of Carrot
  • 1 unit of Orange
  • 2 cloves of garlic
  • 100 grams of onion
  • 1 jet of olive oil
  • 300 milliliters of chicken broth
  • 1 pinch of pepper
  • 1 pinch of salt

How to make Cold Carrot Orange Soup:

  1. Before making this recipe, the first step is to get all the ingredients ready.
  2. In a pot with oil, fry the carrot, garlic and onion for a few minutes, all cut into small pieces, season with salt and pepper.
  3. It is time to add the chicken broth and orange juice. Cook over low heat and covered for 30 minutes, rectify flavor with salt and pepper.
  4. After this time, blend the soup until a homogeneous mixture is obtained. Strain to obtain a light soup, when it is a little cold take it to the fridge for at least 30 minutes.
  5. Serve the carrot and orange soup cold and enjoy. This light soup is perfect to consume in the summer just like the typical cucumber gazpacho or melon soup with ham.
