Recipe for cannelloni stuffed with meat and chard

Ingredients to make cannelloni stuffed with meat and chard:

  • WHITE SAUCE:
  • 70 gr. butter
  • 2 tablespoons of flour
  • 1/2 liter of milk (or meat/poultry/vegetable or fish broth)
  • Salt
  • Pepper
  • nutmeg
  • FILLING:
  • 1 large onion
  • 70 gr. butter
  • 1/2 kilo of minced meat
  • 2 bunches of chard
  • 4 tablespoons of fresh cheese
  • Salt
  • Pepper
  • nutmeg
  • 1 hard-boiled egg

How to make cannelloni stuffed with meat and chard:

  1. The cannelloni can be prepared with a light dough, cut it after stretching very thin, into squares of more or less 10 cm. on the side, cooking them later in abundant boiling water with salt and only then filling and seasoning them.
  2. If the dough is stretched very thin (for crepes), they can be filled without previously cooking the squares.
  3. Melt the butter in a small saucepan, add the flour and mix.
  4. Add all the milk or broth and cook over moderate heat, stirring continuously with a wire whisk.
  5. Stop boiling for 2 to 3 minutes.
  6. Brown the chopped onion in the butter.
  7. Add the very well minced meat and sauté over high heat
  8. Add the chopped chard and mix.
  9. Remove from the heat, and add the cheese, salt, pepper, nutmeg and egg.
  10. Fill the cannelloni with this preparation.
  11. Cover them with a white sauce, or if you prefer tomato, and place in a regular oven at a temperature of 180ºC, for 15 to 20 minutes.
