Recipe for beef soup with apricots and vegetables

Ingredients to make Beef Soup with Apricots and Vegetables:

  • 4 tablespoons of butter
  • 1/3 onion finely chopped
  • 2 Tomatoes, peeled and seeded
  • 1/2 kilo of meat broth
  • 400g boiled potatoes, peeled and diced
  • 1/4 cup quartered dried apricots
  • 400g of boiled beef
  • 2 tablespoons finely chopped fresh coriander
  • Salt
  • Pepper

How to make Beef Soup with Apricots and Vegetables:

  1. Boil the tomatoes for a few seconds and then wash them in cold water to peel them, cut them and gently remove the seeds, then cut them into small pieces.
  2. Boil the meat, the onion, the carrots, aromatize according to taste and season.
  3. Cook over low heat for 60 minutes. Take the meat aside to chop it.
  4. In another pan, melt the butter over high heat, add the onions, and lower the heat and cook, stirring for 5 minutes until the onion is golden.
  5. Remove the tomatoes and let them boil until the liquid evaporates.
  6. Stir the meat broth and add the potatoes, apricots, salt and pepper until they boil.
  7. Lower the heat and cover, cook until the potatoes are soft.
  8. Remove the meat and stew over low heat for 10 minutes. Taste the seasoning and serve all together.
