Recipe for bean croquettes with tomato sauce

Ingredients to make bean croquettes with tomato sauce:

  • 400 grams white beans, cooked and drained
  • 100 grams of onion
  • 1 carrot
  • 1 clove garlic
  • Cornstarch (if needed)
  • Salt
  • 2 eggs
  • 200 grams of breadcrumbs
  • 3 deciliters of vegetable oil for frying
  • 3 deciliters of tomato sauce

How to make bean croquettes with tomato sauce:

Peel the onion and garlic, chop them into brunoises (chopped into small squares) and sauté them with a little oil and salt. Crush the previously cooked beans.

Add the garlic and the poached onion and the carrot also chopped in brunoises but without cooking. We mix until we have a consistent and compact mixture. If it is soft, we can add cornstarch and cook the whole thing until it forms a very consistent cream. Let it cold down. Shape the croquettes and pass them through the beaten egg and the breadcrumbs. We fry them in hot oil a few at a time.

Once the croquettes are fried, we remove them to a tray with absorbent paper to remove excess oil. We serve them on hot plates accompanied by a tomato sauce.
