Recipe for Baked Potatoes with Chickpea Sauce

This potato dish is both simple and delicious. The potatoes are prepared in the oven and served with a nutritious sauce of chickpeas, wild asparagus and walnuts, which also goes great with other preparations, for example, with vegetable meats. It is a satiating dish, since it integrates several ingredients with a low glycemic index. Ingredients to make Baked Potatoes with Chickpea Sauce:

  • 1 purple onion
  • 2 cloves of garlic
  • 1 bunch of wild asparagus
  • 6 potatoes
  • ½ cup of cooked chickpeas
  • 4 tablespoons of oil
  • 2 cloves of garlic
  • ½ lemon (juice)
  • 1 handful of walnuts
  • 1 splash of white wine
  • ½ teaspoon of salt
  • 1 pinch of black pepper
  • 1 jet of water

How to make Baked Potatoes with Chickpea Sauce:

Peel the potatoes and cut them into medium pieces. Place the potatoes on the oven tray, pour a splash of oil and stir. Preheat the oven to 180 degrees and bake the potatoes until soft for half an hour.

Meanwhile, dice the purple onion and slice the garlic. Heat a pan with oil and fry the onion and garlic until golden brown. Once the potatoes are ready, add them to the pan with the sauce and stir to continue with the recipe for baked potatoes with walnut and chickpea sauce.

On the other hand, toast the nuts in a hot skillet and separate half to decorate. Also roast the green asparagus in the skillet until soft. Reserve half of the asparagus, cut the other half into small pieces and place them in the blender jar.
