Raw Vegetable Tabbouleh Recipe

A refreshing, healthy and very light Mediterranean couscous salad.

Conaceiteysal shares a simple step by step to learn how to prepare a tabbouleh in a very original, fun and, above all, healthy way. If you have run out of ideas, you are having a family meal or with friends and you want to surprise without making a heavy dish, keep reading and discover how to make this vegetable salad.

Ingredients to make Raw Vegetable Tabbouleh:

  1. 1 sheet of puff pastry
  2. 1 glass of couscous
  3. 1 pinch of salt
  4. Butter
  5. 2 glasses of water
  6. 1 onion
  7. 1 piece of leek
  8. 1 handful of radishes
  9. 1 broccoli
  10. 1 pinch of mint or spearmint
  11. 1 handful of cherry tomatoes
  12. 1 red pepper
  13. 1 piece of Lettuce
  14. 1 carrot

How to make Raw Vegetable Tabbouleh:

  • To start making the Arabic tabbouleh we must line a bowl with the puff pastry sheet, trim the edges, prick the puff pastry with a fork and fill the inside of the bowl with some chickpeas to prevent it from rising when baking for 10 minutes at 180 ºC.
  • We take a glass of couscous, a little liquid butter or oil, a pinch of salt and pour two glasses of boiling water over the couscous. We cover for 5 minutes and after that time we remove so that it stays loose.
  • Place the couscous in a large salad bowl and add the following finely chopped ingredients: onion, leek, radishes, chopped broccoli, mint or mint, cherry tomatoes and red pepper. We remove the tabbouleh to integrate the ingredients and the Arabic vegetable salad is ready.
  • Tip: If you prefer, you can boil the broccoli beforehand.
  • As a presentation container for the tabbouleh, we will use a pot, lining the interior with plastic or plastic wrap, and we will place the baked puff pastry inside.
  • We will place the lettuce leaves lining the puff pastry, cutting the excess height so that they are all at the same level. Now is when we can add our couscous salad inside.
  • To decorate, we will place the following ingredients whole: radishes, cherry tomatoes, broccoli and carrot with stem. Our vegetable garden is ready to consume!
