Raw Broccoli Salad Recipe

By now, those of you who have been following me for a long time know how much I like vegetables and salads. If I add the first ones to the second ones, I won’t even tell you. That’s what I did this time: raw broccoli salad, which is also one of my favorite vegetables.  A contrast of color and flavor that will delight you for sure. Fantastic! So keep reading and discover the raw broccoli and dried fruit salad recipe that I propose.

Ingredients to make Raw Broccoli Salad:

  • 1 head of broccoli
  • ½ pomegranate
  • 30 grams of sultanas
  • 20 grams of sunflower seeds
  • 200 grams of creamy or Greek yogurt
  • ½ red onion not very large
  • ½ dessert spoon of salt
  • 1 pinch of ground black pepper to taste

How to make Raw Broccoli Salad:

First we prepare the broccoli. We can make the salad with broccoli raw or cooked al dente, which means leaving it very briefly in boiling water. It has to be hard, as I say: al dente. If you cook it too much, it will fall apart when you stir the salad and, above all, it will lose its charm. The idea is to make it crispy, which is why it is preferable to use it raw. Next, add in a bowl the chopped onion, the pomegranate grains (remember to clean them well so that they do not have any remaining skin, otherwise they will make them bitter), the raisins, the sunflower seeds (we can toast them a little first), the salt and pepper. Mix well and add the cooked and drained broccoli, and mix. Finally, add to the yogurt and stir. At this point it is best to roll up your sleeves, wash your hands well and mix the broccoli and yogurt salad with them.

Now we only have to serve and taste. You’ll see what’s richer. Seriously, this raw broccoli and nut salad packs a surprising punch. A warm salad perfect for fall. Second, we can prepare a cod omelet, which we can also serve at the same time as the salad, or, in line with vegetarian recipes, pasta with mushroom sauce.
