Raspberry Kuchen Recipe

The word “kuchen” comes from German and is used to refer to a type of cake that is very popular throughout the country, especially in the Volga River area. At the end of the 19th century, many Germans emigrated to different countries, including Argentina, taking the recipe with them and spreading it throughout the world.

Kuchen, in general, is a sweet cake that can be made with different ingredients, but also salty varieties. In this article we share a recipe for raspberry kuchen that is very easy to make, ideal for tea time or to serve as a dessert.

Ingredients to make Raspberry Kuchen:

  • 2 egg
  • 2 cups of flour (280 grams)
  • 1 teaspoon of baking powder
  • 1 cup of sugar (200 grams)
  • 100 grams of butter
  • 50 cubic centimeters of milk
  • For the raspberry kuchen filling
  • 300 cubic centimeters of milk
  • 200 cubic centimeters of heavy cream
  • 1 cup of sugar (200 grams)
  • 5 grams of unflavored gelatin
  • 1 Teaspoon vanilla extract
  • 4 tablespoons of corn starch
  • 1 teaspoon cinnamon
  • 200 grams of raspberries

How to make Raspberry Kuchen:

  1. Before discovering how to make raspberry kuchen, we must prepare the ingredients to check that we are not missing any.
  2. We are going to make the recipe 100% homemade, so we will start by preparing the base dough for the cake.
  3. Which is formed with flour, butter, eggs, baking powder, 1/2 cup of sugar and 50 cubic centimeters of milk.
  4. Place the flour with the sugar and baking powderin a bowl and mix. Then, with the butter and the help of a turbinate, we carry out a kind of sandblasting.

  12. Grease the mold and cover it with the dough, which we will have previously spread with a rolling pin.
  13. Then, to prevent the dough from growing in the oven, we prick the base with a fork. Cut the excess dough and reserve it to make any other preparation, such as mini tartlets.
  14. Bake the dough for the German kuchen for about 15 minutes and set it aside. While it is baking, we prepare the raspberry filling.
  15. To do this, we put the milk, cream, sugar and vanilla in a pot. Heat over high heat until it starts to boil. Separately, we hydrate the unflavored gelatin following the instructions on the package.
  16. When it boils, we lower the temperature to a minimum. Apart, in a cup we dissolve the corn starch with a little cold water. Once dissolved, we add it little by little to the pot, stirring to integrate it. We will see that the mixture thickens as we add the corn starch. We also incorporate the hydrated gelatin and let the preparation thicken a little more. After a couple of minutes, remove it from the heat and let it cool.
  17. Once the filling has warmed, pour half of it over the dough that is in the mold and distribute the raspberries.
  18. We finish the raspberry kuchen by placing the remaining cream and sprinkling cinnamon to taste. Bake again until the filling sets.

  20. It could also set in the refrigerator, leaving the cake for 3-4 hours, however, by baking we obtain the dessert much faster.
