Ramen Soup Recipe

Ingredients to make ramen soup:

  • 1 package of dry thin noodles
  • 1 piece of pork
  • ½ unit of green onion chopped (only the green part)
  • 50 milliliters of soy sauce
  • 25 milliliters of sake
  • 1 handful of bamboo shoots (optional)
  • 1 piece of peeled ginger
  • 1 unit of boiled egg
  • ½ tablespoon of sugar
  • For the chicken broth:
  • 1 unit of carrot
  • 1 unit of onion
  • 1 unit of leek
  • 1 stick of celery
  • 1½ liters of water
  • 750 grams of chicken in pieces (they are their carcasses)

How to make ramen soup:

  1. Before you get down to work, get all the ingredients ready. You will find the dry noodle package in any Asian supermarket and large supermarkets. To make the ramen recipe easily you must prepare two broths separately, one chicken and one pork. We’ll start with the chicken.
  2. To make the chicken broth, clean the vegetables well and cut them into large pieces. Then, take a saucepan with enough capacity, place the chicken in pieces, the vegetables and the liter and a half of water.
  3. When you see the broth begin to boil, remove the foam that forms on the surface with a slotted spoon. Cook over medium heat for an hour, or an hour and a half. When you see that it is ready, strain the broth through a fine mesh strainer and reserve it all, the broth on one side and the vegetables and chicken pieces on the other.
  4. Take another pan to make the pork broth, add a splash of oil and let it heat over high heat. When hot, sear the pork, leaving it for a minute per side. Remove the excess oil and add the soy sauce, half a tablespoon of sugar, the green part of the spring onion, the bamboo shoots and the peeled ginger.
  5. Pour water until the pork is completely covered and turn up the heat. When you see it start to boil, lower the heat to medium and let the other ramen soup broth cook for 35-40 minutes. Halfway through cooking, turn the pork over and remove any foam that forms on the surface
  6. Meanwhile, cook dry ramen noodles in another pot, following package directions. Now that you have everything ready, heat the chicken broth, add 2 tablespoons of soy sauce, 50 milliliters of strained pork broth (you can add more if you wish) and salt to taste.
  7. Cut the pork into strips, distribute the noodles in bowls, pour the previous hot broth, distribute the pieces of chicken and pork, the finely chopped vegetables and the boiled egg cut into thick slices. And voila, you already have your pork ramen soup ready to eat.
