Rainbow Trout Recipe with Almond Sauce and Broccoli Flan

Ingredients to make Rainbow Trout with Almond Sauce and Broccoli Flan:

  • 1 pc. Trout (300 gr.)
  • 1 glass white wine
  • 100cc milk cream
  • 50 gr. almond (filled and toasted)
  • butter (for greasing the bread)
  • FOR THE GARNISH
  • 500cc milk
  • 500 gr. broccoli (cooked and processed)
  • salt and pepper
  • nutmeg
  • 6 units egg

How to make Rainbow Trout with Almond Sauce and Broccoli Flan:

  1. Put the trout in a greased roasting pan in the oven at medium heat with salt and pepper to taste, cook for 10 minutes. In a pan, put the white wine with salt and pepper and the almonds. Bring to a boil and add the milk cream, cook over medium heat until thickened.
  2. To make the flan Put the broccoli in the food processor and chop, add the eggs, milk and season. Add a tablespoon of corn starch. Grease individual molds and pour the contents into the molds. Cook in a bain-marie for 45 minutes in a soft oven and the molds covered with metal paper.
  3. Plated Put the trout in stoneware dish. Add the almond sauce and as a garnish, unmold a broccoli flan. Decorate with chives and cream cheese for the flan.
