Ingredients to make Radish Salad:
- 18 radishes
- 100 grams goat cheese
- 1 spring onion
- Salt
- Pepper
- 2 tablespoons cashews
- 2 tablespoons raspberry vinegar
- 1 dl of olive oil.
How to make Radish Salad:
We cut the ends of the radishes, make them into slices and reserve. Cut the cheese into medium cubes. Peel and finely chop the onion. Mix the radishes well with the cheese and onion. In a mortar, mash the cashew nuts with a little salt, until we achieve fine dough. Add the vinegar, mix well and add the oil, stirring constantly until the sauce comes together. Season with salt and pepper to taste and set aside. We plate the mixture of radishes, onion and cheese. Top with the vinaigrette we have made and serve.
