Radish and avocado salad with quinoa recipe

Ingredients to make radish and avocado salad with quinoa:

  • 200 grams of Quinoa
  • 200 grams of green beans
  • 1 garlic clove
  • 4 tablespoons of olive oil
  • 1 lemon (for juice)
  • ½ dessert spoon of ground cumin
  • 1 pinch of salt and black pepper
  • 100 grams of Radishes
  • 1 ripe Hass avocado
  • 50 grams of mixed lettuce

How to make radish and avocado salad with quinoa:

To make the quinoa, rinse, place in a saucepan and cover with cold water. When it starts to boil, lower the heat and let it cook for 15-20 minutes until it is soft. Then, remove it from the heat and drain the quinoa, rinse it and drain it well again. Meanwhile, cook the green beans in a pan of boiling water for 3-4 minutes until tender. Drain and rinse with cold water.

Rub the clove of garlic in the container where the salad is going to be served and when we have finished, we get rid of it. Next, add the olive oil, lemon juice and ground cumin.  Season and mix everything well.

Add the quinoa and beans to the bowl. Also add the radish, avocado and lettuce leaves. We mix everything well and serve it.
