Ingredients to make Rabbit Cheese:
- 1 rabbit
- 1 cow’s leg(s)
- 3 liters of water
- 1 bay leaf(s)
- 1 onion(s)
- 4 garlic clove(s)
- 1 sprig celery
- 2 carrot(s)
- 3 eggs)
- 1 pepper(s)
- 1 sprig(s) parsley
- salt and cumin to taste
How to make Rabbit Cheese:
- Place the water, the cow’s leg, the bay leaf, cumin, onion, celery and salt in a saucepan.
- Cook the leg until the water has reduced by one third.
- Add the whole rabbit, previously washed and leave boil for one hour.
- Then remove from the heat and strain the broth. Separate all the meat from the rabbit bones, leaving the meat as large as possible.
- Then chop the cow’s leg into very small pieces.
- In a mold container, place in the bottom pieces of cooked carrot and peppers, slices of hard-boiled egg, sprigs of parsley.
- Pour over this the broth with the rabbit meat and the leg. Let cool until softened. Remove from the mold and serve cold.
