Rabbit Cheese Recipe

Ingredients to make Rabbit Cheese:

  • 1 rabbit
  • 1 cow’s leg(s)
  • 3 liters of water
  • 1 bay leaf(s)
  • 1 onion(s)
  • 4 garlic clove(s)
  • 1 sprig celery
  • 2 carrot(s)
  • 3 eggs)
  • 1 pepper(s)
  • 1 sprig(s) parsley
  • salt and cumin to taste

How to make Rabbit Cheese:

  1. Place the water, the cow’s leg, the bay leaf, cumin, onion, celery and salt in a saucepan.
  2. Cook the leg until the water has reduced by one third.
  3. Add the whole rabbit, previously washed and leave boil for one hour.
  4. Then remove from the heat and strain the broth. Separate all the meat from the rabbit bones, leaving the meat as large as possible.
  5. Then chop the cow’s leg into very small pieces.
  6. In a mold container, place in the bottom pieces of cooked carrot and peppers, slices of hard-boiled egg, sprigs of parsley.
  7. Pour over this the broth with the rabbit meat and the leg. Let cool until softened. Remove from the mold and serve cold.
