Rabbit casserole recipe with noodles

Ingredients to make Rabbit Noodle Casserole:

  • 1 chopped rabbit of 1 kg.
  • 1 garlic
  • Salt
  • 250 grams of fat noodles
  • 1 bay leaf
  • 1 green pepper, seeded and chopped
  • 2 ripe tomatoes, peeled and finely chopped
  • 1 medium onion, peeled and finely chopped
  • 1 glass of dry white wine
  • Chopped parsley
  • 4 tablespoons olive oil
  • Thyme

How to make Rabbit Noodle Casserole:

Wash, dry and salt the rabbit. Next, heat the oil in a pot or pan and brown the meat. Add the onion, pepper, tomatoes and let it all sauté together. Stir occasionally for 15 minutes.

Water with the wine, add the bay leaf and a mixture made with the garlic and parsley. Add 1 l. of water, salt. Cook covered over low heat for 40 minutes or until the rabbit is practically tender. Add the noodles and cook until ready. Serve immediately. Clay pots are good allies when you make a rabbit stew.
