Quinoa Vegan Paella Recipe

Ingredients to make Vegan Quinoa Paella:

  1. 1 piece of red pepper
  2. 1 carrot
  3. ½ onion
  4. 180 grams of quinoa
  5. 1 tomato
  6. 50 grams of green beans
  7. 80 grams of green asparagus
  8. 2 cups of vegetable broth
  9. 1 pinch of salt
  10. 1 pinch of ground black pepper

How to make Vegan Quinoa Paella:

  • We gather all the ingredients to prepare the quinoa paella with vegetables.
  • To start, we make a sauce with the onion and the red pepper cut into small squares. Let cook 4 minutes over medium heat. Meanwhile, we cut the green beans into pieces of about 3 centimeters and boil them in water for 5 minutes. After this time, drain and reserve.
  • Add the carrot peeled and cut to the same size as the pepper, and the asparagus also in small pieces. Season with salt and pepper and cook for another 5 minutes.
  • Add the green beans and the washed quinoa, and mix well so that they are integrated into the sauce.
  • It is time to add the vegetable broth to our vegetarian paella. Add twice as much broth as quinoa and cook over low heat for 20 minutes.
  • Tip: If you see that the paella runs out of liquid, you can add more vegetable broth or water.
