Quinoa Stuffed Avocados Recipe

  • 2 units of medium avocados.
  • 150 grams of cooked quinoa.
  • 100 grams of chopped mushrooms.
  • Garlic paste.

How to make Quinoa Stuffed Avocados:

  1. To start making our recipe for avocados stuffed with quinoa, the first step is to prepare all the ingredients.
  2. Bring a frying pan or a deep pot over medium heat, add a little olive oil and fry our chopped mushrooms with salt and pepper to taste
  3. While our mushrooms are frying, what we do is open our avocados without removing the outer shell, only the pit and the remains of the center left by the pit, ideally bathe the avocado with a little lemon juice so that it does not blacken.
  4. Once the mushrooms are fried, add the quinoa, garlic paste to taste and if you want more salt and pepper to taste.
  5. Mix well until all the ingredients are integrated. Turn off the heat.
  6. Once we turn off the heat where our quinoa-stuffed avocado filling is located, if you want as something additional add chives or chopped chives to give it an extra touch.
  7. Fill each of the quinoa-stuffed avocado halves very carefully without the filling overflowing and decorate the dish with two chive tips and pepper.
