Quinoa Soup Recipe

Ingredients to make Quinoa Soup:

  • 1 onion
  • 2 cloves of garlic
  • 1 sprig of chives or leek
  • 1 kilogram of pumpkin
  • 1 carrot
  • 1 cup of quinoa
  • 1 teaspoon of oregano
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon of pepper
  • 2 tablespoons of oil
  • 1 cup of heavy cream (optional)

How to make Quinoa Soup:

  • Wash the onion and leek well and cut them into small pieces along with the garlic.
  • In a pot add two tablespoons of oil and fry the garlic, onion and leek for 5-10 minutes, or until the onion turns transparent.
  • Cut the carrot and pumpkin into medium pieces and add them to the sauce, stir and fry for 10 more minutes. Keep in mind that this soffit that you are preparing is the one that will bring all the flavor to the quinoa soup, so it is worth dedicating this time to it.
  • Add the half cup of quinoa, the seasonings and 4 cups of water, stir well and cook with the pot covered over medium-low heat for approximately 20 minutes.
  • If you decide to add heavy cream, pour 1/4 cup into the quinoa soup while it is still boiling, turn off the heat, stir and let stand covered for 10 more minutes.
