Quinoa is not a cereal nor is it a legume, but rather a grain with a very different nutritional composition that makes it a very healthy and special food. That is why the FAO and NASA put it as an example of the perfect food for the human diet since it has an ideal proportion of nutrients.

This quinoa salad with smoked salmon that I am sharing this time is a nutritious, healthy and light dish… and it is also very simple to prepare and is in a category for a summer lunch or dinner.

Ingredients to make Quinoa Salad with Smoked Salmon:

  • 50 grams of Quinoa
  • 25 grams of arugula
  • 8 raspberries
  • Red onion
  • 1 slice of smoked salmon
  • 50 milliliters of olive oil
  • 1 garlic clove
  • Lemon-juice
  • 1 tablespoon of Sherry Vinegar
  • 1 pinch of salt
  • 1 pinch of ground pepper

How to make Quinoa Salad with Smoked Salmon:

First of all, before you start making the quinoa salad with smoked salmon you have to measure the amount of quinoa you use since to boil it you need 3 measures of water for one of quinoa. Put the quinoa in a colander and wash it under the tap to remove the bitter taste.

Pour the quinoa into a saucepan with the boiling water, season and let it boil for about 10 minutes, turn off the heat, cover the saucepan and let it rest for another 10 minutes. Julienne the onion cut the raspberries in half and cut the smoked salmon into small squares. Put the cleaned arugula in a bowl or salad bowl where you are going to serve the quinoa salad, and add the onion, the raspberries and the cut smoked salmon. Top with cooked quinoa and mix. We are going to prepare the vinaigrette for the quinoa salad with salmon: to do this, peel and mince the garlic clove in a mortar. Add the lemon juice, the tablespoon of vinegar, the salt and the pepper. Finally, add the olive oil and mix, beating to emulsify the ingredients.

Finally, serve the quinoa salad with smoked salmon as you like; I have put it in a square mold to make it look different.

Put all the salad in the mold first and then sprinkle with the vinaigrette, leave for 5 minutes and unmold. Serve the quinoa salad with salmon accompanied by the vinaigrette that you have left over.
