Quinoa salad recipe with fresh cucumbers

Ingredients to make Quinoa Salad with Fresh Cucumbers:

  • 2 cups of water
  • Chopped fresh parsley
  • 3 tablespoons of vinegar
  • 1/2 teaspoon ground red pepper or paprika
  • 1 or 2 cucumbers, thinly sliced
  • Extra virgin olive oil (1/4 cup, or to taste)
  • Sea salt
  • 1 cup of quinoa

How to make Quinoa Salad with Fresh Cucumbers:

Cook the quinoa with 1 teaspoon salt and simmer in a saucepan over low heat until the grain is tender-al dente and the water has been absorbed, about 15 minutes. Let it cool to add it to the salad.

Combine the minced shallot, vinegar, and crushed red pepper in a small bowl. Incorporate little by little, stirring the virgin olive oil until emulsified. Place the quinoa in a large serving bowl and add the chopped cucumber, parsley and freshly made vinaigrette. Season with salt if you see that it is not at your point of salt.
