Quinoa Recipe with Coconut Milk

Ingredients to make Quinoa with coconut milk:

  1. 100 grams of Quinoa
  2. 200 milliliters of water
  3. 750 milliliters of coconut milk (or other non-dairy milk)
  4. 50 grams of coconut sugar or other sweetener
  5. ½ cinnamon stick
  6. 1 piece of lemon peel
  7. 1 pinch of salt
  8. 1 pinch of ground cinnamon
  9. 1 pinch of icing sugar

How to make Quinoa with coconut milk:

  • The first step to prepare this dessert of quinoa with coconut milk is to wash the pseudo cereal well with your hands until the water stops coming out cloudy with the help of a fine strainer.
  • This is done because in the ripe grains of quinoa there are toxins that are bad for our body with a bitter taste called “sapiens”. So apart from eliminating toxins, in this way we will eliminate the bitter taste that may be in our recipe for quinoa with vegetable milk.
  • Once well cleaned, place the quinoa in a pot over low heat and dry it for about a minute.
  • Next, pour the water, raise the heat to the maximum and when it starts to boil, turn the heat to a minimum and cook the quinoa until the water evaporates completely (approximately 15-20 minutes).
  • In principle, the quinoa would already be cooked and we could use it perfectly like this for any dish, but since we want it to have the texture of a traditional rice pudding, what we will do is cook it for a longer time so that it releases the starch and becomes syrupy. To do this, first add the half cinnamon stick, a pinch of salt and the lemon peel without the bitter white part. We remove a minute.
  • Next, pour the coconut milk into the pot, raise the heat, wait for it to boil, then lower the heat to a minimum and cook the quinoa with milk for about 45 more minutes, stirring from time to time and making sure that it does not run out of liquid. In this case, add a little more vegetable milk to the preparation.
  • When the quinoa with vegetable milk has been boiling for about 40 minutes, add the coconut sugar, stir everything well, and let it cook for about 5 more minutes. You will see that at this time the quinoa dessert with coconut milk has a more honeyed texture and is similar to the traditional rice pudding.
  • Tip: You can use any other sweetener or powdered sweetener.
  • Once the 45 minutes have passed, the quinoa with milk will have this caramel-colored appearance due to the color of the coconut sugar, but if you prefer it to be white, add another type of sweetener such as white sugar or icing sugar.
  • Next, remove the cinnamon stick and the lemon peel from the preparation and pour the quinoa with milk into cups, bowls, terrines or bowls, as you prefer. Then let them cool and then put them in the fridge for a few hours so they are cold and even more like the usual rice pudding recipe.
