- 250 grams of cherry tomatoes
- 1 dessert spoon of cornmeal
- 1 pinch of salt
- 1 pinch of black pepper
- 1 pinch of baking powder
How to make quinoa pizza for celiac:
- The first step to make our gluten-free recipe is to prepare the ingredients.
- Let’s start with the quinoa pizza dough. So, first we take the previously cooked quinoa to a bowl and add the cornmeal, blend or process these ingredients.
- Add the olive oil, salt, pepper and a pinch of baking powder. Knead the preparation well with your hands. Add a little water to form the dough and incorporate the ingredients.
- Give it a round shape; these amounts are for an individual size slice of pizza. Take the pizza dough to a refractory and bake on both sides for 15 minutes. If you want you can also cook the dough in a hot pan, remember that the dough is delicate.
- Bring a frying pan over medium heat with a little olive oil, add a little salt, pepper and thyme and fry the cherry tomatoes cut in half until they are at the desired cooking point.
- Now we are going to make the base sauce for the gluten-free pizza. To do this, in a bowl add the tomato paste, a little olive oil and dry oregano to taste. Mix well until the ingredients are integrated.
- Spread the sauce over the quinoa base and sprinkle the grated cheese on top. Bake the pizza until the cheese is melted.
- Remove the pizza for celiac from the oven and add the sautéed cherry tomatoes
