Quinoa and spinach croquettes recipe

Ingredients to make quinoa and spinach croquettes:

  • 100 grams of Quinoa cooked
  • 1 teaspoon of garlic paste
  • 80 grams of cooked spinach
  • 1 cup of breadcrumbs
  • 1 unit of onion
  • 1 pinch of Salt and Pepper

  1. To start making our quinoa and spinach croquettes recipe, the first step is to prepare all the ingredients.
  2. This is a great alternative for people who don’t eat meat or who are vegetarians.
  3. In a bowl add the spinach and white onion.
  4.  Process until well integrated and a uniform mass is obtained.
  5. Add a tablespoon of bread crumbs, salt, pepper together with half of the cooked quinoa, a little garlic paste.
  6. The result should be a compact and full-bodied dough, if you wish you can add a tablespoon of olive oil.
  7. Process until the ingredients are well integrated.
  8. If you want the quinoa and spinach croquettes to be vegan just make sure the breadcrumb is vegan.
  9. Finally add the remaining cooked quinoa. This time we are not going to process, mix everything with the help of a spatula.
  10. Reserve our mixture in the fridge or refrigerator for approximately 30 minutes.
  11. After this time, we are ready to cook the green quinoa croquettes.
  12. To do this, first grease a refractory pan and with the help of a spoon, place the most rounded portions possible so that they are the croquettes.

  14. Cook in the oven at 160ºC. For approximately 20 to 25 minutes.
  15. You can also make them fried, but if you want to take care of your diet and cook with less fat, I recommend doing them like I did, in the oven.
  16. Serve our quinoa and spinach croquettes decorating with Parmesan cheese on top to taste.
