A quick and light basmati rice salad perfect for serving as a main course to stop starving on a diet. This recipe is very easy to make, it does not have many complications and it tastes great.

In this case we have used a rice with curry, easy to get to make in the microwave and easy to prepare step by step if you have time and desire to cook. Apart from the rice, the star ingredients of this light salad are avocado and fresh cheese, all combined with a coriander and lemon dressing that will enhance all the flavors of the dish and give it an unmistakable fresh touch.

Ingredients to make Quick and Light Basmati Rice Salad:

  • 100 grams of cooked basmati rice
  • 6 cherry tomatoes
  • 1 avocado
  • 1 piece of fresh cheese or feta cheese
  • 1 lime
  • 1 bunch of coriander
  • 1 can of corn

How to make Quick and Light Basmati Rice Salad:

Making this fresh rice salad is very simple; the first thing you have to do is cook the rice.  We have used rice bowls for microwave cooking, which are ideal for this type of dish, but remember that you can also use leftover rice from another preparation or cook basmati rice step by step.

We then begin to list the extras of our rice salad. Cut the tomatoes in half, remember that I always use cherry tomatoes because I like their flavor better but you can use any other tomato for salads that you like.

Cut the avocado into squares. The amount of avocado is a little to taste, I have used a whole avocado that was not very large.

To make the dressing for our basmati rice salad we are going to finely chop the cilantro and mix it with lemon juice and a pinch of salt. The quantities in this preparation are also to taste, add all the lemon juice that you consider necessary.

Place all the ingredients already cut and measured on the work table to assemble our avocado salad. As you can see, we have drained the corn kernels and we have also cut the fresh cheese into squares.

Start by mixing the rice with the cheese, corn and tomato in a bowl. These ingredients are more consistent so it will allow us to stir them well, without problems, to distribute them evenly.

Then add the lemon dressing and mix everything well again. Finally add the avocado and stir gently so as not to destroy or undo it.

If the avocado is very ripe and soft you can add it directly to the plate and place it to the side as part of the decoration.
