This time I propose a quick and easy tuna puff pastry empanada. With the puff pastry it is very good and so we do not have to complicate ourselves much. The filling is very simple, tuna, egg and fried tomato, a filling that everyone likes and for these Easter days it is ideal to prepare a dinner without complications. Dare to try my quick and easy tuna empanada that you will surely repeat!

Ingredients to make a quick and easy Tuna Empanada:

• 2 sheets of rectangular puff pastry

• 1 can of fried tomato

• 4 small cans of tuna in oil

• 3 hardboiled eggs

• 1 egg to paint the dough

How to make a quick and easy Tuna Empanada:

Put one of the puff pastry sheets on the baking tray. With a fork we will prick all over the dough. We cover the dough with fried tomato, leaving a little of the edge without tomato. On top of the tomato we will put the drained canned tuna well distributed throughout. Chop the hard- boiled eggs and cover the tuna.

We cover the easy and quick empanada with the other sheet of puff pastry, closing the edges all around. Beat the egg and paint the dough. We also prick it a little with a fork so that the dough does not rise too much.

We put the easy homemade tuna empanada in the oven at 180-200 ºC (depending on your oven), in the middle part with ignition on top and bottom, and leave it until the dough is golden. And ready to serve your quick and easy tuna empanada!
