Quick and Easy Miso Soup Recipe

I love quick, easy and tasty recipes like this delicious Miso Soup. This recipe is of Japanese origin and is made with a type of pasta called udon, which is nothing more than a variety of noodles made with wheat flour. In general, it is obtained in stores specialized in the sale of Asian products.

  • 1 package of udon paste
  • 2 cups of vegetable broth
  • 1 tablespoon of miso (Japanese paste)
  • ½ dessert spoon of hondashi (Japanese seasoning)
  • 1 egg
  • Chives to taste

 

How to make Quick and Easy Miso Soup:

  • To start preparing the miso soup, place the vegetable broth together with the hondashi in a pot and let it boil for 2 minutes. We recommend using homemade vegetable broth to make the dish much tastier.
  • After the previous time, add the udon pasta and cook over low heat for 3 more minutes. Udon pasta is originally from Japan and is characterized by having a thicker than usual noodle shape. If you can’t find it, you can make miso soup with spaghetti, yakisoba, or any other type of noodle.
  • Turn off the heat, add the miso and the chopped onion to taste. Stir the soup to dissolve the miso and continue cooking this delicious Japanese broth. At this point, you could also add other ingredients present in the original recipe, such as wakame seaweed or tofu.
  • Tip: It is very important not to let the miso boil so that it does not lose its properties.
  • To give a different touch to the miso soup, we are going to include a poached egg in the dish. This step is totally optional, so if you want to follow the original recipe you should skip it, since it does not incorporate eggs. Now, if you want to try our version, put water to boil in a pot or saucepan. When it reaches the boiling point, pour in a tablespoon of vinegar and lower the heat to medium. Then, with the help of a spoon, form a small whirlpool and, right in the center, crack the egg. Cook it for 2-3 minutes. If you think that you will not be able to make the poached egg correctly, form a bag with plastic wrap to place it inside and place this bag in the water.
